Hello and happy Monday! Shockingly, I have zero runs to share today (or this week rather), because I didn’t run a single mile this weekend! I mean, there were miles logged on the elliptical, and if you measure number of episodes watched on Netflix in miles, then I certainly would have racked up those as well, but no running took place! It wasn’t necessarily intentional, I guess I just wasn’t feeling it this weekend! However, I did almost kill a plant and eat a lot of Tex-Mex, so how about we recap that?
Friday afternoon I got off work a couple hours early before Jake, so I made a quick trip to the gym to do some speed work on the elliptical. I logged a little over 3.5 miles when I booked it back to the apartment to order us a pizza for dinner (pepperoni, spinach, and mushroom and my side, and banana peppers on Jake’s side because he is gross). We mostly sat around and watched Freaks and Geeks (for the one millionth time), and then called it a night shortly there after.
Saturday ended up being an unintentional rest day, as I spent my morning getting my nails done with my mom, and then the rest of the gang (Dad and Jake) met up at Chuy’s where I had the most delicious taco salad of my life.
I opted for a cilantro vinaigrette as my dressing, and now I want to put it on everything. Vegetables? Chicken? Cheesecake? I don’t care. It’s so good it can work with anything. After my taco salad, Jake and I hit up Trader Joe’s for our weekly groceries, where I met the strangest receptacal for wine my eyes have ever seen.
Wine in a can! And yes of course I bought it. However, one can is entirely too much wine for me. I’m pretty sure one can equals like 3.5 glasses, but I felt very um, well, drunk, afterwards and was so fearful of being hungover (my least favorite feelings of all the feelings) that I immediately drank enough water to cause a drought, and in my loopy state of mind, a Greek yogurt (why???). What a great evening to realize how much I can’t hang anymore. Go me.
Thankfully not hungover, but definitely sleepy, I skipped the long run and opted for a five mile trek on the elliptical. Afterwards, whilst doing a hair and face mask (recipe will be posted tomorrow!) I went to water my balcony plants, only to find that one had jumped to it’s death.
I know I mentioned last Friday that I was struggling with my plants, but I didn’t know they were struggling that badly. Jake was kind enough to recover the poor peppermint plant, and much to everyone’s surprise was still in tact! I have since relocated the plant to spot where it can’t rethink it’s life, so hopefully we won’t have this problem again in the future.
After getting my plant back to stable place, my family met up with my Grandma and uncle for a mother’s day celebration at a local Tex-Mex restaurant (I told you I ate a lot of Tex-Mex this weekend), where I had yet another taco salad. Well, actually they were puffed taco shells, but I punched in the top and added some shredded lettuce guac to give it a more salad feel. It was delicious and now I wish I could have taco salad every single day. Maybe that’ll be my life goal. Reach a point where I can both financially, and through the miracle of science, consume taco salads every day and never go broke, or be on the receiving end of mild indigestion. One day.
