TGI-freaking-F, y’all. On top of a chaotic work week, the weather has been off and on cloudy and chilly here in North Texas (I wrote this on Wednesday, and naturally it’s sunshine-y and beautiful the rest of the week), and for reasons unknown I’ve been waking up with a headache almost every morning. Needless to say, I’ve been feeling pretty “bleh”, since Monday. It’s definitely been one of those weeks where I plug in random beach destinations and dates into Expedia and pretend that I’m going on vacation. In an effort to keep my pity party to a minimum (and do something a bit more proactive than Expedia searches), I thought I’d exercise trying to find the good in this week rather than the ugly, and share a few favorites! Here’s a few highlights from the past week:
Jake and I make it a tradition to visit our favorite restaurant, Del Frisco’s Grille, every Valentine’s Day (but also sometimes birthdays, anniversaries, a Wednesday) for our absolute favorite dish in the world, truffle mac and cheese. I could write love letter itself to this mac and cheese, but I’ll spare you all the cheesy puns (EXCEPT FOR THAT ONE) today. It is truly the best thing I have ever eaten in my entire life, and I wish they served in a giant cereal bowl. Aside from the mac and cheese, Jake and I both ordered steaks (also stupid delicious). Jake drank his favorite Old Fashioned, and I was boring and opted for water because I started to feel as if I was coming down with a cold that day, and figured alcohol plus Tylenol Cold and Sinus wouldn’t be the best combination. All in all it was a perfect dinner, and the company wasn’t so bad either *annoying wink face emoji*.
Inner Peace Tea from Boca Java
As part of my Dad’s Christmas present, I ordered him a subscription to the Stars Hollow coffee club from Boca Java (the Gilmore Girls obsession runs deep in the Layfield house), but soon found a present for myself with their tea selection! I’ve been actively avoiding caffeine lately (it has the unfortunate tendency to spike my anxiety) and trying out herbal teas here and there, but finally found a new favorite with the Inner Peace tea! The taste is very light and mild, with a subtle floral hint. I absolutely love it, but I would advise maybe not keeping a bag of it in your car because based off of it’s looks, you would probably be arrested if you don’t live in a state where marijuana is legal.
The Latest Kate
With winter bringing gloomy overcast days, and hitting a busy season at work, my weekdays have had a tendency to feel a little less than stellar lately. Every so often I’ll hit a moment in the day where I suddenly morph into Chandler Bing and ask myself, “Could this day be any worse?!?” Sometimes it’s hard to step outside of a situation and understand that a tiny moment in a day, or maybe the whole of day doesn’t define your entire life, or that it will carry into the rest of the week. Aside from taking care of myself by working out, eating right (or not right, depending on how bad of day warrants wings and fries), I’ve really been enjoying these little encouraging art pieces from The Latest Kate! A friend shared some of her work on Facebook last month, and I’ve loved the encouraging text paired with the cute animal drawings (#foreveraLisaFrankfan). I’ve saved a few on my work computer to look at whenever I hit a wall in my day, and it’s always the nicest little pick-me-up!
