Now that I’ve hopped aboard the (sort of) vegan train, I’ve been experimenting with different juices and smoothies to go with my breakfast each morning, and the process of making the most of the contents in my refrigerator has been a real test on my creativity to say the least. Last week the fridge was mostly nothing but the bare necessities (and not in the fun Jungle Book way), making it difficult to come up with something flavorful and fun to eat. My vegetable count was higher than what I had in stock for fruit, and not being sure how to make celery taste good (excluding Bloody Mary’s), I quickly remembered a juice that combines the best of both worlds, V8! I have loved V8 as long as I can remember, and strangely enough never thought to make my own until I had all of the ingredients staring me in the face. I opted for a spicy V8 flavor for my first try, and it turned out great! Here’s what I used:
- 2 small tomatoes – gutted, and diced.
- 1/4 cup carrots and celery – chopped
- 1/2 sliced beet
- 1/4 tsp ginger – chopped
- Juice of 1/2 a lemon
- 1 sprig of oregano / or one basil leaf
- 2 strawberries (Totally optional, I just added it to sweeten it up a little)
- Pinch of cayenne pepper
I threw my ingredients into a blender on the “liquidate” feature, and let it run until everything looked smooth, but if you have a juicer or a Vitamix (congrats) you should probably use that instead. My concoction came out a little more thin in consistency compared to a normal spicy V8, but it tasted great! I’m thinking maybe this week I can try my hand at the fruity V8 Splash, but I know I’ll be disappointed if I don’t end up with that electric orange color that the bottled version has. I can only assume you can achieve that color by juicing that orange couch from Teen Nick and half a field of carrots, neither of which I have the time for, or the resources (although I’d like to think Kel Mitchell has that couch in his basement and sits on it while drinking orange soda and listening to Coolio).
