Being that I am off from work for the holiday week, I’ve had to get a little creative with my midday snacking. Normally while I’m at work I’ll save some fruit to tide me over until lunch time, but the temptation of eating everything within a ten foot radius is quite real when I’m bored at home. In an effort to combat this, as while as doing something a little creative, I devised a DIY version of one of my favorite packaged snacks, apple cinnamon rice cakes! I can, have, and will eat an entire sleeve of Quaker Oats Apple Cinnamon Rice Cakes, but given that you aren’t getting really any sort of an actual fruit serving, but these DIY rice cakes uses about half an apple, and leaves the other half as an extra snack!
- Rice cakes
- Almond butter (Any nut butter will work!)
- Green apple
- Start off by cutting up your apple. I chose to thinly slice (lol, I can’t thinly slice anything with my $10 knife set) my apple and save the rest of sections for extra snacking! Slather on your desired amount of almond butter onto your rice cake, or if you’re feeling fancy, melt a little in the microwave and drizzle it on! Place your apple slices on top, and then sprinkle with cinnamon!
So good! Also, you can customize this with any fruit and nut butter combo and it is sure to be delicious! I was also thinking that since rice cakes are pretty bland to begin with, you could maybe even do a veggie and hot sauce combo? I’ll try that one out before I subject you to any potential DIY rice cake disasters…
